Many Fantasy guests are among the RVers who just rave about Instant Pots. For those of you not familiar with the Instant Pot phenomenon, it’s described as a “programmable pressure cooker” which incorporates the functions of six cooking appliances into one: pressure cooker, slow cooker, rice cooker, steamer, sauté pan and warmer. Perfect for an RV – less appliances and accessories to store in the galley and an easy way to prepare food in less time.
Here’s one of our favorite recipes, courtesy of Mel Magson:
Ingredients:
- ½ Red pepper, thinly sliced
- ½ Onion diced
- Ham, diced
- 4 eggs
- 2 TB heavy cream
- 1 Cup Grated cheese (mozzarella, cheddar, monterey jack, or mix together)
First, sauté pepper and onion in Instant Pot; put in a small spring form pan. Then:
- Add meat
- Whisk eggs and cream with salt and pepper and add cheese, pour over vegetable/ham mixture; cover pan with tin foil
- Add a small amount of water to Instant Pot. Put spring form pan on a wire rack in Instant Pot.
- Pressure cook 20 minutes
- Cool 10 minutes
- Release pressure
- Serve
